Is there anyway that the Antibiotics would interfere with my test results?

If you had a negative HIV test 6 months after the risk, you are negative. The fact that you had another negative test more than a year after the risk only confirms that you do not have HIV.

There are some medications that can affect the body’s ability to produce antibodies to HIV but antibiotics will not do this.
